Some ships, can be found in those only, whereas other shipyards may hold different variants of the same ship hauler, miner, etc If my memory is right, all big shipyards within a race have the same products to sell, so it can be possible to find them in multiple locations. They basically act as a big equipment dock. You can use freight drones or docked Falcon Haulers to ferry goods to the destination station.
