Meringue is a dessert that originated in Switzerland and is made from whipping egg whites and sugar together along with other optional ingredients like lemon, vinegar, and cream of tartar to add a tangy hint to it.
Egg whites are beaten to denature ovalbumin to the extent of getting the perfect foam. Flavors include vanilla, apple juice, or orange juice. Does meringue have to be baked? It is simply made by whipping castor sugar with egg whites to just about when soft peaks are developed.
This type of meringue is made by incorporating boiling sugar syrup into lightly whipped egg whites until stiff peaks are obtained and the temperature is dropped. The high temperature involved denatures ovalbumin perfectly resulting in a very stable foam.
Therefore, it can be used for piping and topping pies. Finish off your Baked Alaska by topping it with Italian meringue, either blow-torch it or bake it to give it a golden brown hue. It is made by whipping the eggs with sugar over a hot water bath called a bain-marie. It is later baked to get a gummy center like a marshmallow.

Whisk the egg whites and vanilla at high speed until they have stiffened and create peaks. Add the white wine vinegar to the stiffened egg whites and fold it through. Add 2 tb spoonfuls of the sweetener to the egg white mixture by sprinkling on top and folding through to keep the mixture as fluffy as possible, then repeat until all the sweetener is combined.
Leave a gap between each meringue. Bake in the middle of the oven for 60 minutes. After 60 minutes, remove the meringues and check to see if they are crispy to the touch. If not, turn off the oven and replace the meringues inside with the door closed for another 10 minutes. Notes These meringues will go soggy if they are buried under wet ingredients, so it's best to sit them on top of dishes if you would like them crunchy. If you do not keep them in an airtight container, they do get soggy after a while. I normally place them on the table just before serving and if not consumed, they go back to the container. Otherwise, if left for a day or two just outside on a table, they do get softer and a bit sticky.
